120 g of flour

2 eggs

80 g melted butter

1 teaspoon vanilla extract

1 teaspoon of baking powder

60 ml of milk

1 pinch of salt
- Preparation

Preheat the oven to 180°C (gas mark 6) and prepare a mini-cake or muffin tin by lightly greasing it.

Mix the dry ingredients.
In a bowl, sift the flour with the baking powder and a pinch of salt. -
Beat the eggs and sugar
In a separate bowl, whisk the eggs with the sugar until the mixture becomes frothy and light. -
Add the vanilla and butter
Stir in the melted butter and vanilla extract, then mix well. -
Gradually add the flour and milk.
Add the flour alternately with the milk to obtain a smooth and homogeneous dough. -
Fill the molds
Pour the batter into the molds 2/3 full to prevent it from overflowing during cooking. -
Bake
Bake for 12 to 15 minutes, until the mini cakes are golden brown and a toothpick inserted comes out clean. -
Cooling and decorating:
Let them cool on a wire rack. You can sprinkle them with icing sugar or decorate them with vanilla icing.Pages: 1 2
