  • 200 g (1 cup) granulated sugar
  • 60 ml (¼ cup) water
  • 120 ml (½ cup) heavy cream (warm)
  • 50 g (3½ tbsp) unsalted butter (room temperature)
  • ½ tsp sea salt (optional for salted caramel)
