Blackout Cake Ingredients:

For the Chocolate Cake:

  • 2 cups whole wheat flour
  • 1 ½ cups sugar substitute (such as monk fruit or erythritol)
  • ½ cup unsweetened cocoa powder
  • 1 ½ teaspoons baking soda
  • ½ teaspoon salt
  • 1 ½ cups unsweetened almond milk
  • ¼ cup unsweetened applesauce (instead of vegetable oil)
  • ¼ cup light butter, melted
  • 2 tablespoons apple cider vinegar
  • 2 teaspoons vanilla extract

For the Chocolate Pudding Filling:

  • 2 cups unsweetened almond milk
  • ¼ cup cornstarch
  • ⅓ cup unsweetened cocoa powder
  • ½ teaspoon sugar substitute
  • ¼ teaspoon salt
  • 1 teaspoon vanilla extract

For the Chocolate Ganache:

  • ½ cup Lily’s mini chocolate chips (sugar-free)
  • ½ cup lite coconut milk
