American Irish Soda Bread

Preparation

1. Preheat oven to 375°F and line a large baking sheet with parchment sheet, set aside.
2. In a large bowl whisk flour, sugar, cornstarch, baking powder, baking soda, and salt together.
3. Using clean hands or a pastry cutter, cut the butter into the dry ingredients until the mixture resembles a crumble.
4. Add buttermilk, egg, and raisins, stirring with a fork until it resembles a dough.
5. Turn out the dough onto a well floured work surface, kneading the dough until it becomes cohesive and bumpy, about 12 to 14 hand kneads.
6. Form the dough into a 6-inch diameter disk shape.
7. Transfer to the prepared baking sheet and cut a cross shape on top of the dough.
8. Bake until golden brown until a toothpick inserted in the center comes out clean with a few moist, not wet, crumbs, about 40 to 45 minutes. If the bread is browning too much, cover the top with aluminum foil.
9. Once pulled from the oven, brush the top with melted butter.
10. Serve warm from the oven with high quality butter, enjoy
