Baked Oatmeal with Pineapple “Frosting” Recipe

Directions:

  • Preheat the oven to 350°F and spray a 9″x13″ baking dish with non-stick cooking spray.
  • In a large mixing bowl, combine oats, almond milk, applesauce, eggs, pancake syrup, vanilla extract, coconut extract, Stevia, cinnamon, baking powder, ginger, and salt.
  • Stir in the grated carrots, apples, and raisins.
  • Pour the mixture into the prepared baking dish and bake for 40 minutes or until set and lightly browned.
  • While baking, prepare the frosting by mixing Greek yogurt, pancake syrup, vanilla extract, coconut extract, and drained pineapple in a bowl. Cover and refrigerate.
  • Let the baked oatmeal cool slightly before serving. Add a couple of spoonfuls of frosting to each piece. Garnish with Reddi Wip and walnuts if desired.
