Blackout Cake Recipe

Blackout Cake Directions:

Make the Chocolate Cake:

  • Preheat your oven to 350°F (175°C).
  • Grease and flour two 8-inch round cake pans.
  • In a large mixing bowl, whisk together the flour, sugar substitute, cocoa powder, baking soda, and salt.
  • In a separate medium bowl, whisk together the almond milk, applesauce, melted light butter, apple cider vinegar, and vanilla extract.
  • Pour the wet ingredients into the dry ingredients and stir until just combined (do not overmix).
  • Divide the batter evenly between the prepared cake pans.
  • Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  • Let the cakes cool completely before assembling.

Make the Chocolate Pudding Filling:

  • In a medium saucepan, whisk together sugar substitute, cocoa powder, cornstarch, and salt.
  • Gradually whisk in the almond milk until smooth and well combined.
  • Cook over medium heat, stirring constantly, until the mixture thickens and comes to a boil.
  • Reduce heat and simmer for 2-3 minutes, stirring continuously.
  • Remove from heat and stir in vanilla extract. Let the pudding cool to room temperature.

Make the Chocolate Ganache:

  • In a heatproof bowl, combine Lily’s mini chocolate chips and lite coconut milk.
  • Microwave in 20-second intervals, stirring between each, until the chocolate is fully melted and smooth.

Assemble the Cake:

  • Place one chocolate cake layer on a serving plate.
  • Spread the chocolate pudding filling evenly over the top.
  • Place the second cake layer on top.
  • Pour the chocolate ganache over the cake, allowing it to drip down the sides.
  • Let the ganache set before slicing and serving.
