4. Roll the Pastry

 

  • Starting from one long side, tightly roll the pastry toward the center.

  • Repeat from the other long side so the two rolls meet in the middle.

  • This creates a double-rolled log (like a palmier).


5. Slice & Arrange

  • Slice the log into ½-inch thick pieces using a sharp knife.

  • Place slices cut-side up on one prepared baking sheet.

  • Leave about 2 inches of space between each piece to allow for puffing.


6. Repeat & Bake

  • Repeat the entire process with the second pastry sheet.

  • Bake both trays in the preheated oven for 12–15 minutes, or until:

    • Golden brown

    • Crispy

    • Caramelized on the edges


7. Cool & Serve

  • Let the elephant ears cool slightly on the baking sheets.

  • Be careful—the sugar will be very hot!

  • Serve warm and enjoy!
