4. Roll the Pastry

Starting from one long side, tightly roll the pastry toward the center.

Repeat from the other long side so the two rolls meet in the middle.

This creates a double-rolled log (like a palmier).
5. Slice & Arrange

Slice the log into ½-inch thick pieces using a sharp knife.

Place slices cut-side up on one prepared baking sheet.

Leave about 2 inches of space between each piece to allow for puffing.
6. Repeat & Bake

Repeat the entire process with the second pastry sheet.

Bake both trays in the preheated oven for 12–15 minutes, or until:

Golden brown

Crispy

Caramelized on the edges

7. Cool & Serve

Let the elephant ears cool slightly on the baking sheets.

Be careful—the sugar will be very hot!
