The iceberg lettuce goes on next, in a line right above the meats. And this is where you take the flavor up a notch:

You drizzle that lettuce with olive oil and red vinegar, and then sprinkle it with some oregano and salt and pepper. It’s a simple thing, but it’s what great sandwiches are made of.
Roll up the tortilla tightly, then wrap it in plastic wrap and pop it in the fridge for at least an hour. You can give it much longer in the fridge, but an hour will ensure that the cream cheese hardens back up and holds everything together before you’re ready to slice and serve.

What Variations Can I Make for H&T High Rollers?
Bacon — You can sub in bacon bits here for an easy shortcut without sacrificing much flavor and texture.
Cheese — Many kinds of cheese work here, not just cheddar! Stick with something you can shred.
The Meats. — While ham and turkey (and bacon!) is my favorite club combo, you can use one or the other OR even change it up completely with some roast beef instead.

8 oz cream cheese, softened
1/2 lb bacon, cooked and crumbled (or bacon bits)
1 1/2 cups cheddar cheese, grated
4-6 large flour tortillas
1 lb shaved ham
1 lb shaved turkey
3 cups iceberg lettuce, shredded
Olive oil and red wine vinegar, as needed
2 teaspoons dried oregano
Kosher salt and freshly ground black pepper, to taste
