Introduction
This refreshing cheesecake with lime mousse is the perfect choice for summer parties or a special dessert after dinner. Its light, creamy texture and the delicate acidity of lime complement each other perfectly, creating a taste that will delight everyone. Easy to make, but impressive on the plate!
Ingredients:
Base:
200g biscuits (e.g. butter biscuits)
100g butter, melted
Cake filling:
500g cottage cheese (you can use Philadelphia cream cheese)
200ml 30% cream
150g icing sugar
3 eggs
2 tablespoons potato flour
Zest of 2 limes
Lime mousse:
3 limes (juice and zest)
150ml 30% cream
80g icing sugar
3 gelatin leaves (or powdered equivalent)
1 teaspoon honey (optional)
Instructions:
Base:
Crush the biscuits finely and mix with the melted butter. Line the bottom of a cake tin (approx. 23cm) with the filling and press thoroughly. Refrigerate while you prepare the cheese mass.
Cheese mass:
Cream the cottage cheese with the icing sugar. Add the eggs, potato flour and grated lime zest, mix thoroughly. Finally, gently mix in the stiffly whipped cream. Pour the mass onto the prepared base.
