Ingredients

½ cup balsamic vinegar
3/4 cup chicken broth
⅓ cup brown sugar
1 tablespoon dijon mustard
4 cloves garlic, minced
8 boneless chicken breasts
1 teaspoon oregano
½ teaspoon basil
½ teaspoon thyme
½ teaspoon rosemary
½ teaspoon red pepper flakes
1 teaspoon black pepper
½ teaspoon salt

Preparation

1. Mix together balsamic, broth, brown sugar, dijon, and minced garlic in the bottom of your slow cooker.
2. Trim fat of the chicken breast if desired, then seasoning generously with herb mixture, salt, and pepper.
3. Arrange chicken in the slow cooker and stir to coat with the balsamic mixture.
4. Cover slow cooker and set to high for 3-4 hour or low for 6-8. Chicken is done when internal temperature reaches 165 degrees.
5. Optional: Once chicken is fully cooked, spoon juices from the slow cooker into a small saucepan and simmer on medium to reduce. Add 1 teaspoon corn starch for a thicker sauce.
