Make the caramel:
- In a medium saucepan, combine the sugar and water. Stir gently just to moisten the sugar.
- Cook over medium heat without stirring until the mixture turns a deep amber color. Watch closely—caramel can burn quickly!
Add the cream carefully:
- Remove from heat and slowly pour in the warm cream, stirring constantly. It will bubble vigorously, so be cautious.
Finish with butter:
