If this is your first crepe journey, I’m glad you’re here with me. This is a fool-proof and no-nonsense way of making these French desserts. A few key techniques to abide by here. ALWAYS have a bowl of cubed butter near for every crepe and keep your perfect flipping tool handy.
Start your crepes in a preheated pan and add a cube of butter. The butter should gently melt and not steam too quickly. If it steams, turn your pan off the heat and let it cool before starting over. Gently ladle the crepe batter into the preheated the pan and swirl to create an even crepe. It only takes 30 – 45 seconds to cook that first side, so don’t go anywhere. Watch the top of the crepe to dry out the surface to know when to flip it over.
If you’re making this ahead of time, stabilize your whipped cream with gelatin and these will be perfect. A refreshing strawberry confection that you and your family will be addicted to this year.
For crepes:
4 eggs
1 cup all purpose flour
1/4 cup granulated sugar
1 cup whole milk
1 tablespoons vanilla extract
A pinch of salt
2 tablespoons unsalted butter, cubed
