Add a cube of butter to the pan and swirl. Once melted, add a ladle of crepe batter to the pan and swirl to create your crepe. The crepe should be thin, so don’t worry if this is too thick.
Flip crepe over after about 30 – 45seconds with a rubber spatula then continue to cook for another 20 seconds.
Remove crepe to a plate and let cool while you repeat with remaining crepes.
Assemble roll by three crepes overlapping halfway over each other. Spread half the whipped cream, then sprinkle with broken wafer cookie and fresh strawberries.
Roll up by folding the sides about an inch to create a long rectangle. Then roll from one end to the other. Slice into 1 1/2 inch rings.
