If you want perfectly crispy French fries, using vinegar in the preparation process can make a significant difference. Here’s how to do it!
Why Vinegar?
Vinegar helps to:
- Lower the pH : This creates a firmer texture in the potatoes, resulting in crispier fries.
- Remove Excess Starch : Soaking potatoes in vinegar water reduces starch, which can help achieve that desired crunch.
Ingredients
- Potatoes (Russet or Yukon Gold are ideal)
- Water
- White vinegar (or apple cider vinegar)
- Salt (optional)
- Oil for frying (vegetable or canola)
Instructions
Step 1: Prepare the Potatoes
- Wash and Cut : Peel (optional) and cut the potatoes into even-sized strips.
- Soak in Vinegar Water : In a large bowl, mix 1 part vinegar to 3 parts water. Soak the potato strips for at least 30 minutes. For better results, soak for up to 2 hours.
Step 2: Rinse and Dry
- Rinse : After soaking, drain and rinse the potatoes under cold water to remove excess vinegar.
- Dry Thoroughly : Pat the potato strips dry with paper towels or a clean kitchen towel. This step is crucial for achieving crispness.
