Ingredients:

For the Strawberry Crunch Coating:

1 cup strawberry flavored cookies, crushed (like Golden Oreos with strawberry filling)

1/2 cup freeze dried strawberries, crushed

2 tbsp melted butter

For the Cheesecake Filling:

8 oz cream cheese, softened

1/4 cup powdered sugar

1/2 tsp vanilla extract

1/4 cup heavy whipping cream

For the Berries:

12-15 large strawberries, tops removed and hollowed out

Instructions:

Prepare the Strawberry Crunch Coating:

In a small bowl, combine crushed strawberry flavored cookies, freeze-dried strawberries, and melted butter until it reaches a crumbly consistency. Set aside.

Make the Cheesecake Filling:

In a mixing bowl, beat the softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy.

In a separate bowl, whip the heavy cream until stiff peaks form, then fold it into the cream cheese mixture until well combined.

Assemble the Stuffed Berries:

Take each hollowed-out strawberry and generously pipe or spoon the cheesecake filling inside.

Dip the top of each stuffed strawberry into the strawberry crunch coating, pressing lightly to make it stick.
